In ‘91 Michele planted the first vineyard with Merlot, Cabernet Sauvignon, Sangiovese and Syrah, with the aim of indulging both the established great expression of Bordeaux grape varieties in Bolgheri, both the all-Tuscan elegance of Sangiovese and the all-Mediterranean complexity of Syrah. It is the first wine in the territory to use the Bolgheri Rosso designation. From 2012 it becomes Bolgheri Rosso Superiore, as the vines have now reached sufficient age to express all their complexity. As of the 2019 vintage, Syrah is no longer part of the blend.
Each variety fermented separately in cement casks truncated conical cement casks of 30 hl. The yeasts are exclusively spontaneous. After two to three days of open pump-over, only one pump-over per day is carried out closed. With frequent tastings, the moment of racking is carefully chosen (usually after about 20 days), after which the wine goes directly into barriques to carry out malolactic fermentation.
Maturation in French barriques with 40% new wood for a
time between 12 and 18 months.
